Features of production
The wine is made from 100% Chardonnay grapes grown in vineyards in the hills.
They produce about 60 hectoliters per hectare.
Exposure: mainly south, south-east.
Type of cultivation: espalier withGuyot pruning.
In the last decade of September, the grapes are harvested, which are carefully selected and collected in perforated boxes, are immediately brought to the winery for wine-making.
Wine-making and ageing
In the winery, the grapes are destemmed and pressed to remove the solids.
Then we proceed to the settling of the must with flotation and the fermentation of the same in stainless steel tanks, which continues for about fifteen days at a a controlled temperature (between 16° and 18°C to preserve the best flavors). The wine is then left to stand about 6 months on the lees and is then bottled.
Colour: intense straw yellow.
Bouquet: distinctive, delicate, with hints of tropical fruit, pineapple.
Taste: dry, harmonious and well balanced.
Average life of wine
It is advisable to consume wine within 2-3 years after harvest in order to better appreciate its freshness.
Servies and matching
It is recommended to serve this wine at a temperature of about 10°C - 12°C. It’s a wine suitable for use as an aperitif or with appetizers and main dishes especially seafood.
