Winemaking and aging

Cellar
Tenuta San Mauro Castagnole delle Lanze (Province of Asti).
Fermentation
Following a soft pressing, ethanol fermentation occurs in barriques where wine is resting for 6 months, then is bottled to create the wine head.
Aging
The wine is resting on yeasts for at least 36 months, then is placed in pupitre wine racks for the Remuage process lasting around 45 days.
Bottling
After dégorgement process takes place and liqueur d’expédition is added, the wine is capped and left aging in bottle for around 3 months prior to release.
Availability
At least 4 years from the harvest time.

Wine description

Colour

Intense straw yellow with a subtle and persistent effervescence.
Bouquet
Subtle and intense with bread crust and dried fruit scents.
Palate
Complex, well-balanced and creamy; well-structured, lively acid with a long and persistent length.
Pairings
It is recommended for the whole meal, excellent for fish and white meat-based dishes. Excellent with medium-seasoned cheese.
